The highest quality, certified

Our Iberico
is certified by a body
accredited by ENAC

The word “ibérico” is protected by law, and ours is certified by a product certification body accredited by ENAC. These are the guarantees, verified by third parties, that back our Iberico hams, shoulders and cured loin (lomo) — and the way the whole company works.

Iberico Quality Standard

CALICER certificate · no. PI/0943/19

“CALICER Certified Product” seal, no. PI/0943/19 — Iberico Product

Our Iberico production is certified by CALICER, a product certification body accredited by ENAC, under the quality standard for Iberico meat, ham, shoulder and cured loin (lomo) set by Royal Decree 4/2014.

What does it mean for you? That when our label says “acorn-fed” (bellota) or “free-range grain-fed” (cebo de campo), “100% Iberico” or “50% Iberico breed”, an independent certification body has checked the breed, the feeding and the husbandry of each batch. The coloured tag you see on whole Iberico hams and shoulders is a numbered seal assigned by ASICI, the sector's interprofessional organisation, at the slaughterhouse and piece by piece; on boneless and sliced formats, that same colour travels on the label.

Tierra de Sabor

Tierra de Sabor guarantee mark, from Castilla y León

The Iberico hams and shoulders that we make and label at our curing house are covered by “Tierra de Sabor”, the differentiated-quality guarantee mark of the Junta de Castilla y León. It distinguishes the region's agri-food products that meet verified quality requirements; in our case, on the basis of the same Iberico Quality Standard (Royal Decree 4/2014) that CALICER certifies.

Food safety

HACCP, SGCSA and our own health registration

We apply a HACCP system (hazard analysis and critical control points) throughout the whole process, from the arrival of the raw material to packaging, and we have an SGCSA (food quality and safety management system) in place that organises and documents it. Our two facilities are entered in the General Health Register of Food Businesses and Foods (RGSEAA): Barcelona 10.11518/B and León 10.06444/LE. The company obtained Community approval (Industria Cárnica Homologada por la C.E.E.) back in the 80s, when Spain joined the Common Market.

Environmental commitment

Solar power at the curing house

We are committed to renewable sources: in 2022 we installed a 72 kW photovoltaic plant at our curing house in Castilla y León, which provides green energy for curing our pieces. We cure with the climate; the least we can do is look after it. Find out more here (in Spanish).

Responsible packaging. We meet our responsibility as packaging producers: we belong to the collection and recycling schemes for household and commercial packaging (Ecoembes), so that the packaging of your orders gets a second life.
