Iberico shoulder: the ham's little sister
The shoulder is the pig's front leg: a smaller piece than the ham, with a more intense flavour and a lower price per kilo. That's why it's such a good choice when there are only a few of you at home or you'll be enjoying it slowly: you finish it while it's at its best.
Ours range from the black label of the 100% Iberico acorn-fed shoulder to the Gran Reserva Serrano shoulder, a Duroc cross: whole —with the weight and curing you choose—, boneless or sliced. The differences, without jargon, in shoulder or ham: which to choose; and if you're after the bigger piece, our Iberico hams.
