View nutrition informationFree-range grain-fed is the middle tier of Iberico: pigs reared outdoors in the countryside and fed on cereal and legume feed and on whatever the land itself provides. This one comes from Iberico and Duroc cross pigs (50% Iberico breed) and carries the green label of the Iberico Quality Standard.
Description
We cure it for more than 30 months in our curing house in Castilla y León: just the right amount of salting, washing and shaping by hand, resting, natural drying rooms and an ageing cellar. The result is a ham with a milder flavour than acorn-fed ham, good marbling, and one of our hams that best balances quality and price.
Here it comes already boneless: about 3.5 kg of ham without the bone, vacuum-packed, for slicing at home as you go with a long knife and no ham stand. There is no weight or degree of curing to choose. Take it out of the fridge a while before slicing so that it comes up to temperature.
How it arrives and how to serve it
How it arrives: boneless, in manageable pieces, vacuum-packed with its presentation netting and protected in a cardboard box.
It is the convenient option: there is no bone to work around, it fits in any fridge and it can be sliced without a ham stand. The usual choice for those who will eat it over several occasions, those who would rather not deal with the bone, or those who prefer to slice it at home at their own pace.

Frequently asked questions
- What's the difference between ham and shoulder?
- Ham is the pig's hind leg and shoulder is the front leg. The shoulder is smaller (4 to 6 kg, compared with 7 to 9 kg for a ham), cures for less time and has a more intense flavour; the ham gives larger slices, more nuance and a little more usable meat. That's why the shoulder costs less per kilo. It isn't worse: it's a different piece.
- Which suits me best: whole, boneless or sliced?
- Whole, if you enjoy carving, have a ham stand and are feeding plenty of people: it lasts for weeks. Boneless, if you want the same quality without the technique: you can cut it with a knife or a slicer, it fits in the fridge and every gram of it is edible. Sliced, in 100 g vacuum packs, if you just want to open and serve. If you're not sure, call us and we'll advise you.
- Where do you ship to, and how quickly?
- We ship to all of mainland Spain and to much of Europe. On the mainland, delivery usually takes 24/48 working hours; for the rest of Europe, the time depends on each destination. We prepare and protect every order in our workshop.
