Description

Early means the olives are picked while still green: they yield less oil per kilo, but in return it comes out more intense, with a marked bitterness and pungency that show it is freshly made. This is a finishing oil, not a frying oil: raw on toast, fish or tomato, and in fine-dining kitchens to lift a dish.
